Looking for a sweet treat? These will hit the spot. The base
is made from cashews, almonds, and flaxseed…so good for you. Flaxseed is loaded with Omega -3, which is so
good for ADHD children and the nuts provide a great source of protein.
1 cup ground cashews
3/4 cup ground almonds
1/2 cup ground flax seed (I buy this already ground from Costco)
1 teaspoon of cinnamon
Dash of salt (if your almonds are dry roasted & salted omit the added salt)
1/8 cup Agave Nectar
1/4 cup Honey
1/4 cup Honey
1 teaspoon vanilla extract
1/4 cup coconut oil (be sure to use unrefined so it has the coconut flavor)
1/2 cup of Enjoy Life Mini Chocolate chips (they are gluten, dairy, & soy free!)
Grind up raw cashews and almonds in a food processor (I used a coffee grinder and left mine a little coarse. Don't grind too much or you'll make butter ;o) ).
Place all cookie dough ingredients into a large bowl and mix by hand or with a spoon. Mix until a dough forms and you can make a large ball.
Refrigerate dough for a about 10 min because when you roll it the heat from your hands will melt the coconut oil and the dough will be hard to handle.
With your hands, roll into balls & place on wax paper in the freezer for about 15min. Once they are hard and won't stick together put them in a bag and store in freezer.
*I like to rolled some of them in a mixture of coco power, cinnamon, and raw sugar.
