I just made this for lunch yesterday and it was so good. We really like the nutty flavor of the black rice.
Ingredients
1 cup of black rice
1 can of Cuban black beans (has chilies and spices)
1/2 to 1 cup water (really depends on how much water is in your beans)
1/4 cup chopped cilantro
1 diced avocado
A dash of your favorite hot sauce (we love Slap Ya Mama)
Directions
Put rice, beans, and water in a pan and cook until done. Top with cilantro, avocado, and hot sauce.
I thought the recipe on the back of the rice sounded good too.
